Kristina Eklund
Chairman of the Board
Kristina Eklund serves as Board Chair of Kitchen One for One, a role she has held for two years. Her connection to the organization runs deep — she first joined as a volunteer six years ago and stepped into board service shortly after, bringing with her a genuine passion for the mission and community it serves.
Professionally, Kristina is the co-founder of Bespoke Holdings Company, which she launched alongside her husband Blair in 2017. The firm specializes in tailor-made real estate investments grounded in integrity and designed for sound, sustainable returns.
A champion for children, Kristina is the author of five children's books. Her heart for service extends across multiple boards and organizations.
When not with Kitchen One for One, Kristina can be found on the tennis court, hiking trail, or in a Pilates class. She lives in Evergreen, Colorado with her husband Blair and their two sons, Braden and Bo.

My family and I are blessed in our continued support of Kitchen One for One, which aligns with the Christian-centered belief that everyone deserves access to basic sustenance. I enjoy volunteering, travel, art, and spending time with my husband and 15 year old daughter (typically at dance competitions!).
John P. Briggs
Treasurer
Mr. Briggs is a supporter and volunteer for Kitchen One For One. He is the owner/operator real-estate investments specifically in the Mobile Home Community space. He has lived in Evergreen for 30+ years where he enjoys time with his wife, three children and taking advantage of the outdoors.
Scott Blankenship
Secretary
Scott Blankenship is a Managing Director at GQG Partners, a leading asset management firm, where he oversees a team focused on sales and distribution partnerships with major Wall Street institutions. With more than 20 years of experience in financial services, Mr. Blankenship brings deep industry expertise and leadership insight to his role. Before entering the private sector, he served nine years in the United States Army.
Outside of work, Scott enjoys spending time with his family, which includes his wife and two college-aged children. He is an avid reader and enjoys mountain biking and trail running in his free time.
Sharon Wood
Board Member
Sharon Wood has been a volunteer with Kitchen One for One for the past five years, driven by a passion for serving others and ensuring every person feels seen and valued. In addition to her work with Kitchen One for One, Sharon also serves on two other local boards, where she applies her expertise in Leadership Development and Legacy Planning to strengthen organizations and invest in lasting community transformation. In her free time, she enjoys spending time with her kids, working out with friends, playing pickleball, reading, and enjoying great music.
